I've got a particular itch I feel like I need to scratch.
I have a fever, and the only prescription is more Zelda.
I've got some pairings, and some plots, both within existing game canons and in original versions of the Hyrule setting.

DO NOT ask me for a Breath of the Wild roleplay. I will shoot you with an Ancient Arrow and watch it explode in your chest before feeding you to a hinox, or perhaps tossing you to a Sentinel and watch it blow you away with its explodey lasers. So do yourself a favor and don't.

Ten years after the Gerudo War in which Link became the Hero of Time, sealed Ganondorf in the Sacred Realm, sacrificed his mantle as Hero and walked away, he returned to Hyrule. Now a ripe young twenty, a yearning has grown in him, which began as a familiar wistful nostalgia and grew into an overpowering desire to see Zelda again. The princess remembers him, yes...but things are different now, not to mention his status as a practical nonentity in Hyrule, and so though she's as eager to be with him as he is to be with her, any sort of union is out of the question--marriage to an unknown would be frowned on, and an affair even more so. This changes when Ganondorf's errant followers return, and Link is put in the position of protecting, then fighting alongside, the Princess to defend Hyrule once again.

Link returns to Hyrule chasing a treacherous warlock, only for the fiend's minions to outnumber him and surround him. Though he manages to fight them off, he is badly wounded, and Epona drags him home, to Lon Lon Ranch. There, Malon cares for his wounds, and the two rediscover the bond they shared--and Link realizes that, for totally important story reasons that I totally already know and am definitely not concealing because I haven't made them up yet, she must accompany him on his quest to stop the warlock from unleashing an ancient evil.
Link x Midna//OCxOC. Two versions of this plot are as follows:
In the battle with Ganondorf for the fate of Hyrule and the Twilight Realm, Link was mortally wounded. Midna told Zelda that she could save him just like Zelda had saved her--by taking him to the Twilight and mending his body by means of transformation. This made him a Twili, and he served in Midna's court as royal protector, enjoying a flirtatious but friendly relationship with the Twilight Princess--until Zant's evil returned in the form of one of his followers, forcing them to fight across the Twilight Realm (and possibly Hyrule?) and form a deeper bond with one another.
Other version: Same dealio; only it features Midna's daughter or granddaughter and a Twili-born iteration of Link fighting a Twilit Ganon before he has the chance to grow in power and be reborn in Hyrule.

A boy is born to the Gerudo tribe. Male Gerudo are widely known to be born once every hundred years, and they are destined to become kings of the tribe. What is not widely known is that they must earn respect, because many Gerudo look on males as weak and stupid. Ganondorf's childhood was not by any means easy, and his young adulthood was rigorous as he had to undergo the King's Quest to prove himself worthy of being called Ganondorf, descendant of Ganon. Having lived most of his life fearing his fellows and ashamed of his gender, the young Gerudo, known only by a matronymic until such time as he earns his kingly name, finds empathy in the heart of a young warrior who sees her comrades' treatment of him shameful and seeks to lend him the respect he deserves, and the comfort and confidence he needs. In response, he promises to make her his queen when he is king. What follows is history, only a portion of which we have seen before...

The Triforce of Power has always been Ganondorf's, and it's always been the Gerudo king who's caused trouble in Hyrule. But what if, one generation, the young Ganondorf and Zelda are married as a way of uniting the two faltering kingdoms, and it becomes one Hylian Union, and a Hylian radical, one who bears the Triforce of Courage, awakens to his power and becomes a fearsome, unstoppable juggernaut, bent on severing the land from the ties of its deluded monarchs? And so Ganondorf and Zelda are united in their fear and their opposition of a violent, mad swordsman who, by some trick of fate, wields the power of the gods: The Triforce of Courage.
A steampunk adventure, in a Hyrule Kingdom with automata, airships, corsets, tea, a Victorian Zelda, a genteel Link wielding a swordcane, and a maniacal inventor Ganondorf?
A modern adventure, in a Hyrule Kingdom with paved highways, sports cars, motorcycles, a suit-clad Zelda, a biker Link, and a corporate tycoon Ganondorf?
A sci-fi adventure in the Hylia system, with the Zoras, Gorons, Korok, Hylians and Gerudo as alien races of different planets, and Ganondorf as a cyborg Gerudo-Hylian hybrid who intends to overthrow the solar system?
