can we leave the race of the character vague, if we want it to be revealed later, or it being a mystery ? as in the character having a human appearance, but not necessarily being human. also, does the race have to be an existing one, or can we take creative liberties ? without creating gods, or races that are overpowered and would break the rules of course.

Character sheets are not "known information to everyone", they are a clarification (largely for rules and setting based information). These can be vague within reason, but as an example, if you leave "race" as "unknown" that unknown cannot later be "dragon/god/vampire". It can be something nondescript and basic (human or half-elf, for example). Otherwise, that's generally fine.
